Students from the Mineral Springs High School EAST Lab addressed the Mineral Springs School Board at Monday’s meeting concerning school lunches. Cameron Lee, Matthew Lindsey, Ridley Plant and Fourth grader Keithen Dixon talked about a recent visit to Horatio to observe and sample their lunch program. Following the presentation, the board approved requesting qualifications statements from professional food service consulting firms to help with analysis and planning of future meals. Keithen Dixon, a winner at the recent regional co-op reading fair, also talked to the board about his reading project on swimmer Michael Phelps. Dixon won third place in the technology division for his age.
In other business, construction manager Lodi Dixon gave an update on the school building construction and the said the target date is still October or November of this year.
The board met in executive session and then approved renewing Elementary Principal Stacy Gauldin’s contract for an additional year.
